Sue Williams had the Southern slow roast menu today when we catered for a lovely little wedding party in a wonderful family home in Farnborough. We slowly roasted free range pork, shoulder of lamb and brisket of beef all rubbed with our handmade marinades for 10 hours offsite to ensure a mouth-watering pulled texture. As the serve time was 2:30pm we arrived shortly before 10:30am to be able to set our serving tables and make sure everything looked great. As soon as we had set up and got changed into our chefs uniform we started preparing the salads of tomato, basil and mozzarella, home-made coleslaw and vegetable pasta salad. With this we served potato wedges with Cajun spice, fresh bakers rolls, stuffing made using the meat stock and a selection of handmade sauces including apple and horseradish. The wedding party arrived back at 1:45pm and everyone was talking and celebrating a great day. The food was served at 2:30pm and the garden was silent as all the guests enjoyed a fantastic meal. We were thanked for a wonderful service by almost everyone and everyone thoroughly enjoyed there
